filled pretzels



1kg flour
250ml water
250ml milk
40g yeast
150g butter
2tsp salt
3tbsp baking soda
2l water



mix flour and salt
heat 250ml water and melt butter in the water

add cold milk and now dissolve the yeast in the warm mixture
add the mixture to the flour and knead it to a dough

let it set for about 30 mins

cut off little dough pieces and form it like you want
there are a lot of options for fillings as well(cheese, weener, ground etc)


heat the 2l water in a big pot, add the baking soda
"cook" the pretzels for about 5 seconds and bake at about 200 degrees Celsius(390 fahrenheit) for around 30 mins immediately after

applestruddle nutella-hazelnut and macadamia-white chocolate

Swabian maultaschen on mediterran parmigiano vegetables with feta cheese


dough:

750g flour
6eggs
1tsp salt
water(about 150ml)


filling:
400g mixed ground(pork and beef)
300g creamed spinach
200g mead OR 200g gedarme( you have chop it to ground in a meat chopper tho)
2 eggs
5tbsp breadcrumps
1 onion
150g bacon
100ml cream
majoram
parsley
garlic
nutmeg(dont use too much!)
salt/pepper

side dish:
1/2 zucchini
1/2 bell pepper
3 tomatoes(remove the watery pit)
25g parmesan
100ml white wine

pasta machine and rolling pin are good tools to have here too

mix the ingredients and knead the dough for at least 15 mins
if too wet add more flour, if too dry adda little bit of water(very little)
part the dough into 2-3 pieces and wrap in transparent foil, let it set in the fridge for at least 30 mins


cook the spinach and mix all ingredients very well


roll out the dough, we need it quite thin so if you have a pasta machine use it :)
place the filling on one half, fold over the other half and close the cuts with a rolling pin(if you dont have one use egg whites as glue)

cook the maultaschen in salt-water for 10 mins
get out and rinse with cold water(would stig together otherwise later on)

sear the sliced zuccini and chopped pepper in olive oil
add tomatoes and flavor with salt, pepper and garlic
deglaze with the white wine and boil down
add parmesan and stir


add some olive oil to a pan and sear the maultaschen for a short time
serve with the veggies and some feta

Maultaschen are also good in soup or with eggs and onions

chicken cream-curry



I see more and more people buying the uncle bens ready-made sauce which doesnt make any sense given that it is
- inferior(in so many ways)
- expensive
- doesnt save much time(home-made curry is very easy and quick)

150g white rice
300g chicken
1 small Onion
200ml white wine
200ml chicken broth
200ml cream
3tbsp curry
veggies of your own choice(I used peas)
oil

cook white rice

cut chicken into small pieces and sear it on high temperature in some oil but only for a very short timeframe(we just want that i gets some colour)
get it out and put away when it looks like that

cut onions, add some more oil to your pan and sweat the onions until transparent
add the curry powder and instantly deglaze it with the white wine

boil down until almost no liquid left and deglaze with the chicken broth
add salt, pepper and veggies here
again boil down until almost no liquid left and add the cream
lower temperature and add chicken
cook on low temperature until you reach desired consistency

snickers-brownies



100g chocolate
3 normal sized(60g i think) snickers
130g butter
150g flour
1tsp baking powder
1tsp salt
100g sugar
artifical sweetener(i used a liquid one and some stevia)
3 eggs
2 scoops choco protein powder

melt 100g butter, 2 snickers and the 100g chocolate(I just put all in a bowl and then in the oven for a few mins)
mix flour with baking powder and salt
mix eggs, sugar, artifical sweetener and the protein powder in a bowl with a stirrer and add the warm chocolate mass -> stir
add the flour slowly while stirring(to avoid clumping)
carve up the remaining snickers bar add mix into the mass


preheat oven to 180 degrees celsius(350 fahrenheit)
butter your baking form, put the mass into it and bake for 20 - 25 mins

low-carb feta scramble



200g lowfat ground
1 whole egg
3 egg whites
50g feta
salt
pepper
majoram
rosemary
garlic

mix whole egg and egg whites

sear the ground(if you do more than 200g part the meat and sear it twice, too much water otherwise and we wont be able to sear it properly)
when it is almost done add spices then add the feta and let it melt
add eggs

may not look like it but tastes really good

Cinnamonroll-cake











dough:
  1. dry yeast(about 10g)
  2. 120ml warm water
  3. 120ml warm milk
  4. 50g butter
  5. 50g sugar
  6. 1 egg
  7. 1tsp salt
  8. 500g flour
  9. 1tsp cinnamon


Filling:
  1. 2tsp cinnamon
  2. butter
  3. 30g sugar



Frosting
  1. 1 1/2 scoops protein powder(XF 2.0 Cinnamon roll)
  2. milk

dough:
process the ingredients to a flat dough(should be easily released from the bowl)         
let it set for like 30 mins(preferably a warm place)

filling:
roll out the dough  butter it and sprinkle with cinnamon/sugar 
                                        
roll up the dough(starting on the wider side) and cut into around 5cm big pieces

butter the spring form and put pieces close together into it
put the protein powder into a bowl and add a very little amount of milk, mix with a stirrer and add milk until you have a creamy texture
top the rolls with the protein cream and put in oven on at 175 degrees celsius(about 350 fahrenheit) for 30 mins

Due to the high interest im starting a food blog with recipes, there will be a big variety from "normal" food  with high carbs/fat to high protein/low-carb  eats.
